The directors of the restaurant Igor Ovchinnikov and chef Evgeniy Seleznev spend a lot of time in the archives of the biggest Moscow libraries and St.-Petersburg searching for the old and forgotten recipes of Russian cuisine. In earlier times the merchants used to invite chefs from abroad. A foreigner as a rule adopted Russian gastronomical traditions very quickly and enriched them with his own experience. So a lot of refined dishes flavored with various sauces appeared.
